Yields: 20 Servings


Ingredients

4 ounces monterey jack cheese
1/4 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon salt
1 clove garlic pressed
1 package frozen chopped spinach thawed, drained and patted dry
1/3 cup chopped carrots
1/4 cup chopped onion
20 slices french bread 1/4 inch thick


 
Instructions
Preheat oven to 375F.

Cut cheese into 20 thin slices; cover and set aside.

In large bowl, combine mayonnaise, sour cream, salt and garlic; mix until well blended. Stir in spinach, carrot and onion. Spread rounded tablespoonful spinach mixture onto each bread slice. Place on baking sheet; top with cheese.

Bake 10 - 12 minutes or until cheese is melted and bread is crisp. Serve warm.
