Ingredients

3 1/4 Pounds lean boneless pork loin roast
3/4 teaspoon grated lemon rind
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
3 garlic cloves minced
1 cup low-salt chicken broth


 
Instructions
Preheat oven to 400F

Trim fat from pork. Combine next 5 ingredients in a small bowl; stir well, and rub evenly over pork.

Insert a meat thermometer into one end of pork. Place pork in an 11 x 7-inch casserole; add broth to dish.

Bake for 30 minutes. Turn pork over, and bake an additional 1.5 hours or until thermometer registers 170 degrees. Discard broth. Yield: 24 servings (serving size: 1-1/2 ounces pork).
