s Cucumber Dip s   



Yields: 1 Serving


Ingredients

1 whole cucumber
1/2 medium onion
8 ounces Neufchatel Cheese softened
1/2 Cup Low Fat Mayonnaise
pepper to taste


 
Instructions
Peel and grate cucumber using a food processor. Remove grated cucumber from food processor and squeeze juice from cucumber until it is just moist (use sieve or your hands).

Use food processor with metal blade to finely chop onion

Add cream cheese, mayo, and pepper to food processor and mix until creamy.

Add cucumber to mixture and gently cycle food processor until blended (mixing too much with the food processor with make the dip too watery).

Pour into a bowl and chill.

Serve with chips.
