Yields: 4 Servings


Ingredients

2 Tablespoons Olive Oil
1 Medium Onion coarsely chopped
2 Cloves Garlic minced
1/2 Pound Lean Ground Beef
3 Cups Tomato Juice or V8
1 3/4 Cups Beef Broth
2 Teaspoons Paprika
1/2 Teaspoon Black Pepper
3/4 Pound Unpeeled Red Potatoes diced


 
Instructions
In a large saucepan, warm the oil over medium-high heat. Add the onion and garlic, and saute until the onion is just translucent, about 2 minutes


Crumble the ground beef into the pan and cook, breaking up the meat with a spoon, until the meat just begins to brown, 5 to 10 minutes


Add the tomato juice, broth, paprika, black pepper, and potatoes, and stir well. Bring the mixture to a boil, reduce the heat to medium-low, cover, and simmer, stirring occasionally, for 20 minutes.
