s Angel Hair Pasta with Spinach and Garlic s   


Serve with additional grated Parmesan cheese
Yields: 4 Servings


Ingredients

8 ounces angel hair pasta
1/2 package 10-ounce package frozen chopped spinach thawed and squeezed dry
1 tablespoon olive oil
3 cloves garlic minced
1/2 cup dry white wine
1/4 cup lemon juice
1 whole tomato chopped
1/4 cup chopped fresh basil
1/4 cup freshly grated Parmesan cheese
Pepper to taste


 
Instructions
Heat olive oil in a skillet. Add the garlic and cook until it turns light brown (do not burn).

Remove the pan from the heat and add the wine. Return to heat and cook about 2 minutes or until wine is reduced by half.

Add the lemon juice, spinach and tomato. Set aside.

Cook angel hair pasta according to package directions. Drain. Add to spinach mixture.

Stir in the basil, Parmesan cheese and pepper to taste. Toss to coat. Serve
